Red Bean Paste Buns from Spirited Away
Ingredients:
- 2 1/3 cups (300g) of all-purpose flour
- 3/8 cups (40g) granulated sugar
- 1 1/2 teaspoon sugar-tolerant, instant yeast
- 6 ounces warm milk
- 1 tablespoon vegetable oil
- Pinch of salt
- One can of sweetened red bean paste
Steps:
- In a small saucepan, heat the milk over low heat to 95°F.
- In a large bowl, add the milk to premixed flour, sugar, yeast, oil, and salt.
- Mix with a spoon until kneadable, then knead until well incorporated.
- Place in a slightly oiled bowl, in a room temperature area, with a damn towel over the bowl to rise for about an hour.
- After an hour, add another tablespoon of flour and knead a bit more.
- Break into 6 equal pieces for medium sized buns or 8 for smaller buns.
- Use your fingers to shape the pieces into flat circles (wide enough to add a tablespoon or two and wrap it up), more narrow toward the edges.
- Put a tablespoon or two in the center of your circles of dough, then close by pulling all of the edges together. Seal tightly.
- Line the steamer basket with parchement and place buns in to proof for 20 more minutes.
- Steam the buns for 20 minutes, then turn off the steamer and let sit for 5 more minutes.
- Serve.
